Facultative anaerobic bacteria residing on the posterior surface of the tongue utilize nitrate reductase enzymes to convert salivary nitrate (NO3-) into nitrite (NO2-). When swallowed, salivary nitrite is converted into nitric oxide in acidic gastric fluid or absorbed systemically into arterial walls.
